Pigs Knuckles and Sauerkraut

Ingredients:


6 pieces pigs knuckles

1 teaspoon salt to taste

1 piece bay leaf

16 ounces sauerkraut -- drained

1 teaspoon caraway seed

2 tablespoons bacon fat

1 small onion -- grated

1 small potato -- grated
 

Preparation / Directions:


Cover pig knuckles with boiling water; add 1 tablespoon salt and bay leaf. Simmer for 1 hour and 30 minutes to 2 hours. Drain. Cover sauerkraut with boiling water; boil for about 30 minutes with caraway seed, salt and bacon fat. Add onion and potato; simmer for 15-20 minutes longer. Place sauerkraut on heated platter; top with pig knuckles.
