Ingredients:


1 pound salt

1/4 cup sage

1/4 cup freshly ground black pepper

2 tablespoons red pepper flakes

13 pounds pork fat
 

Preparation / Directions:


Combine ingredients and run through a grinder mix very well and run through a grinder again stuff into prepared casings cold smoke for 2-4 hours hang to store or chill for 2-3 days and freeze to store
