Stuffed Pork Chops - Diane

Ingredients:


8 whole pork chops -- cut thin

1 teaspoon salt and pepper -- to taste

1/2 cup tomato juice

---STUFFING---

2 tablespoons butter -- melted

3 cups soft bread crumbs

1 teaspoon salt

1/4 teaspoon poultry seasoning

1/4 cup celery -- diced

1/4 cup tomato juice

2 tablespoons onion -- chopped

2 tablespoons parsley -- chopped
 

Preparation / Directions:


Mix together stuffing ingredients. Wipe chips with a wet cloth, rub with salt and pepper. Place two chops together with stuffing between, sandwich style. Arrange stuffed chops in lightly greased baking pan. Pour over 1/2 cup tomato juice. Bake in preheated 350 degree oven for 1 hour or until tender.
