Apple Stuffed Center Cut Pork Chops

Ingredients:


1/2 cup margarine

1/3 cup chopped onion

1/3 cup chopped walnuts

1/3 cup chopped red apple

1 cup chicken broth or water

8 ounces herb seasoned stuffing mix

6 chops center cut pork chops 2-inch pocket cut in side

2 tablespoons margarine
 

Preparation / Directions:


Heat oven to 350 F. In 10-inch skillet, melt 1/2 cup margarine until sizzling; add onion. Cook over medium heat until tender; about 4-5 minutes. Remove from heat. Stir in walnuts, apple, broth (or water) and stuffing. Fill pockets in pork chops with stuffing. In same skillet, melt 2 Tbsp. margarine. Brown pork chops on both sides; then place in 13x9 baking pan. Cover; bake for 60-70 minutes or until no longer pink and thermometer reaches 170 F
