Preparation / Directions:
1.Several hours before cooking, soak the apricots in warm water.
2.Pre-heat your oven to 350 degrees
3.Cut pockets into the pork chops to receive the stuffing, remove any excess fat and lightly flour, salt and pepper.
4.Slice thinly the apricots and combine with the diced apples, celery, cranberries, sage and a pinch of salt.
5.Fill the cavaties in the pork chops with the stuffing mixture and scure the openings with toothpicks or string. Saute the pork chops in a skillet containing the butter and a crushed clove of garlic until golden brown on each side.
6.Pour in the apple cider, cover the pan and place in the oven for about one hour, or until the chops are tender and the apples are cooked.
7.Remove the stuffed pork chops from the pan to set. Remove the garlic clove and any excess fat from the pan juices and reduce by at least half to make a sauce for the chops (flour or corn starch may be added as a thickener if you wish). Place the chops on your serving plate and spoon the sauce over.
