Duchess Potatoes

Ingredients:


5 cups hot diced cooked potatoes

1 large egg yolk

4 tablespoons milk

1/4 cup butter

1 1/4 teaspoons salt

1/8 teaspoon pepper
 

Preparation / Directions:


Heat oven to 400 F. Partially mash potatoes with a potato masher. Add egg yolk, milk, butter, salt, and pepper. Beat with an electric mixer until smooth. If mixture is too stiff to drop from a spoon, add a tablespoon more milk. Drop spoonfuls on a lightly greased cookie sheet. Bake 12 to 15 minutes, until golden brown. This mixture may be piped with a pastry tube around a broiled steak on a heatproof platter or plank and broiled until golden brown.
