Harvest Sweet Potato Soup

Ingredients:


1 cup chopped celery

1 1/2 cups chopped onion

1 tablespoon vegetable oil

3 medium sweet potatoes (about 1 pound) -- peeled and cubed in batches until smooth.

3 cups chicken broth

1 piece bay leaf

1 1/2 teaspoons dried basil

1 1/4 teaspoons salt -- optional
 

Preparation / Directions:


In a Dutch oven or soup kettle, saute celery and onion in oil until tender. Add~ remaining ingredients; bring to a boil over medium heat. Reduce heat; sim mer for 25-30 minutes or until tender Discard the bay leat. Cool slightly. In a blender or tood processor, process soup Return all topan and heat through.
