Hash Browns

Ingredients:


6 slices bacon

1 tablespoon vegetable oil

4 medium potatoes

2 tablespoons margarine

1 medium Onion

1/4 medium green pepper

1 clove garlic

2 tablespoons chopped pimento

1/4 cup cheddar cheese

1 teaspoon salt and pepper
 

Preparation / Directions:


Cook bacon until crisp. Drain on paper towels. Add oil to bacon grease and cook potatoes over medium heat until golden brown. Drain potatoes on paper towels. Melt margarine in skillet. Add onion, green pepper and garlic. Saute a few minutes. Stir in potatoes, crumbled bacon, pimentos, cheddar cheese, salt and pepper to taste. Toss to combine. Serve hot. Approximately 5-7 minutes.
