Lemon New Potatoes

Ingredients:


1 1/2 pounds new potatoes -- scrubbed

1/2 cup water

1/4 cup lemon juice

1 clove garlic -- minced

1/2 teaspoon salt

1/2 teaspoon pepper
 

Preparation / Directions:


1. Cut potaotes into thick wedges. 2. Arrange in single layer in large saucepan. 3. Mix together water, lemon juice, garlic, salt and pepper; pour over potatoes and bring to a boil. 4. Reduce heat to medium; cover and cook for about 20 minutes or until potatoes are almost tender and most of the liquid is evaporated. 5. Uncover and cook for about 5 minues longer or until tender and moisture is totally evaporated.
