Parmesan And Garlic Mashed Potatoes

Ingredients:


1/4 Cup unsalted butter -- (1/2 stick)

12 cloves garlic -- chopped

1/2 Pint heavy cream

1 Tablespoon Salt

1/2 teaspoon fresh ground pepper

3 Pounds potatoes -- boiled

3/4 Cup grated parmesan

3/4 Cup minced Italian parsley
 

Preparation / Directions:


Peel and boil potatoes. While potatoes are cooking, melt butter in saucepan. Add garlic and cook over low heat until garlic is soft. Add cream, bring to a boil, reduce heat and simmer 10 minutes. Drain and mash potatoes with cream mixture. Stir in parmesan cheese and parsley. Top with additional cheese and pepper.
