Preparation / Directions:
Cook potatoes in boiling water until tender. Peel potatoes, dice and set aside. Melt butter over a low flame in medium saucepan. Stir in flour, salt and pepper. Cook, stirring constantly, until mixture bubbles. Gradually add milk. Cook over a low flame, stirring constantly, until the sauce boils and thickens. Stir in diced potatoes and grated cheese. Turn into a 8 x 8 x 2 inch baking dish. Top with shredded cheese. Bake in a gas oven at 375 degrees F. for 15 minutes or until the cheese melts.
