Preparation / Directions:
6 med. russet potatoes peeled (optional), cubed and boiled until just tender 16 oz large curd cottage cheese 8 oz sour cream 1 bunch diced scallions 1 minced clove of garlic (I leave this out periodically through forgetfulness or laziness and the flavor is not adversely effected)
Mix together and pour into a two quart baking dish
Top with
1 cup grated cheddar cheese Lots of Paprika
Bake at 350 for twenty minutes. I like to serve it with steamed
broccoli (but then I like to serve steamed broccoli with a lot of things). I've used low-fat and non-fat versions of the dairy and if anything I prefer them because the final dish is less soupy. I have friends who think this is a side dish and serve it with steak. To each her/his o
