Spinach-Ricotta Stuffed Potato

Ingredients:


10 ounces potato -- split and fluffed baked

1/4 cup frozen chopped spinach -- thawed and squeezed

1/4 cup ricotta cheese -- part skim milk

1 dash garlic powder

1 dash hot red pepper flakes -- optional
 

Preparation / Directions:


In small bowl, combine potato flesh, spinach, ricotta, garlic powder and red pepper flakes, if using; stuff back into potato skin. Bake as directed in basic baked potatoes. Serving (1 stuffed potato) provides: 1/2 veg, 1 pro, 2 bread.
