Edith's Sweet Potato Souffle (8x8 Pan) |

Ingredients:
3 cups mashed cooked sweet potatoes |
3 large eggs |
1 cup sugar -- (or 1/2 cup) |
1 tablespoon vanilla |
1 stick butter melted |
---TOPPING--- |
1/2 stick margarine |
1/2 cup self rising flour |
1/2 cup brown sugar |
1/2 cup nuts -- (pecan-walnuts) |

Preparation / Directions:
Mix together first five ingredients and pour into a pan sprayed with Pam.
Mix together topping ingredients with hands until crumbly.
Bake at 350F until top is brown and crisp.
Ingredients are doubled for a 9x13 pan.
