Ingredients:


340 grams dates

2 Teaspoon bicarb of soda

120 grams butter

340 grams brown sugar

4 large eggs

340 grams self raising flour

1 Teaspoon vanilla essence

---Toffee Sauce:

400 grams brown sugar

200 milliliter thickened cream

250 grams butter

1 teaspoon Vanilla essence
 

Preparation / Directions:


Pudding: Boil dates and bicarbonate of soda in two cups of water. Remove from heat. When cool add remaining ingredients and bake in a 29cm tall side, round cake tin for 1 hr at 150 degrees Celsius. Sauce: Mix ingredients together in a pot and cook until golden. To serve cut slices of pudding and cover with warmed sauce.
