Banana Kiwi Pudding

Ingredients:


1 1/3 cups cooked rice

1/3 cup nonfat milk

1 teaspoon vanilla

3 packages sugar substitute

1 Medium ripe banana -- mashed

1/4 cup whipping cream -- whipped

2 Medium kiwi fruit -- sliced, for garnish
 

Preparation / Directions:


Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy (about 15 to 20 minutes), stirring frequently. Remove from heat; cool. Stir in vanilla and sugar substitute. Just before serving, fold in banana and whipped cream. Garnish with kiwi slices. Note: Use sugar substitute to equal 2 tablespoons of sugar.
