Brazilian Avocado Whip

Ingredients:


2 large avocados fully ripened

4 Medium limes -- juice of

1/2 cup sugar

1 dash salt

4 teaspoons instant-coffee powder -- (optional)

4 drops green food coloring

2 pints vanilla ice cream
 

Preparation / Directions:


1. Dip cutting knife in lime juice; cut avocados in half. 2. Remove pits and peel; force through a sieve or food mill. 3. Add lime juice, sugar, salt, coffee powder and a few drops green food coloring; combine mixture with softened ice cream and beat with rotary beater until smooth. 4. Chill in freezing compartment of refrigerator just until whip becomes firm but not frozen; stir mixture occasionally. Spoon into small dessert dishes and serve at once.
