Preparation / Directions:
In microwave container, break bread into small chunks. In a small bowl, beat egg into milk, add vanilla, sweetener and pinch salt. Pour over bread, making sure all pieces are moistened. Sprinkle lightly with cinnamon, if desired.
Microwave for 10 minutes on medium power. Can eat warm, or cool and refrigerate. If you don't have microwave, place ovensafe container into a pan of water (bake like you would a custard) and bake at 350ΓΈ for about 45 minutes. (Microwave is faster!!) Makes 1 serving, but can be multiplied for more servings.
