Cafe Au Lait Mousse

Ingredients:


1/2 cup cornstarch

1 1/2 cups sugar

2 cups double-strength coffee

4 ounces cream cheese

1/3 cup coffee-flavored liqueur

1 1/4 cups heavy cream -- whipped

2 medium lemons -- slivered , rind of

1/2 cup water
 

Preparation / Directions:


1. Combine cornstarch and 1 1/4 cups sugar in saucepan; stir in coffee, stirring over low heat until mixture bubbles and thickens. 2. Remove from heat and stir in cream cheese and armagnac until smooth and well blended; cover and chill. 3. Fold in 1 cup whipped cream, chill overnight. 4. Spoon into serving dishes and garnish with remaining whipped cream. 5. Mix lemon rind, remaining sugar and water in saucepan; boil hard until almost all the syrup is absorbed. 6. Spread rind on greased piece of foil; cool. 7. Sprinkle lemon rind on top of whipped cream; chill until ready to serve.
