Easy Coffee Pudding

Ingredients:


2 1/2 cups water

1 tablespoon instant coffee

1/2 teaspoon salt

1/2 cup cream of rice

1/4 cup sugar

1/4 cup chocolate sauce

1/4 cup pecans -- or toated slivered almonds
 

Preparation / Directions:


Combine water, instant coffee and salt; bring to a boil. Slowly add cream of rice and cook, stirring constantly, for 30 seconds. Remove from heat, cover and let stand 3 minutes. Stir in sugar. Pour pudding into a serving dish or individual serving dishes. Chill. Serve with chocolate sauce and nuts. Makes 4 to 5 servings.
