English Lemon Curd

Ingredients:


3 large lemons

5 whole eggs

1 cup sugar

8 tablespoons butter -- melted
 

Preparation / Directions:


Grate lemon rind into blender. Squeeze lemons and strain juice into blender. Add eggs and sugar. Turn on motor and add hot melted butter gradually. Place in a heavy saucepan and cook over moderate heat 4 minutes, until thickened. Place in 2 small containers. Chill and serve.
