Preparation / Directions:1. Mix tapioca, 6 tablespoons sugar and salt in a medium saucepan.
2.Stir in milk, egg yolk and plums; let stand 5 minutes, then heat to boiling over medium heat, stirring constantly.
3.Cool.
4.Beat egg white until soft peaks form; beat in remaining sugar and beat until stiff peaks form.
5.Gently fold egg white into cooked plum mixture; stir in vanilla and let stand 20 minutes.
6.Chill; garnish with slices of fresh plums.
