Granny's Blueberry Pudding

Ingredients:


1 quart milk

1/4 cup quick-cooking rice cereal

1 cup sugar

2 packages unflavored gelatin

2 teaspoons angostura aromatic bitters

1 teaspoon pure vanilla extract

1 teaspoon lemon rind -- grated

1/2 teaspoon ground nutmeg

1 cup heavy cream -- whipped

2 cups blueberries -- fresh or frozen

1 pint whipped cream -- (for garnish)
 

Preparation / Directions:


1. Heat milk and slowly stir in quick-cooking rice cereal; cook, stirring, 10 minutes. 2.Mix sugar and gelatin and stir slowly into hot mixture; stir until gelatin is dissolved. 3.Chill until mixture thickens slightly; fold in remaining ingredients. 4.Pour into a 2-quart bowl and chill until firm. Garnish with additional fresh blueberries and nutmeg-dusted whipped cream.
