Neapolitan Banana Delight

Ingredients:


3/4 cup ricotta cheese

1 large ripe banana -- peeled and mashed

1 teaspoon lemon juice

1/3 cup confectioners sugar

2 tablespoons unsweetened chocolate -- grated

1/2 teaspoon almond extract

2 package ladyfingers or almond macaroons -- crumbled

1/2 cup whipped cream -- (optional)

1 medium banana -- sliced (optional)

3 pieces additional grated chocolate -- (optional)
 

Preparation / Directions:


1. Beat ricotta cheese in small bowl of electric mixer until smooth. 2. Add banana, lemon juice, confectioners' sugar, chocolate and almond extract; beat until mixture is light and fluffy. 3. Sprinkle ladyfingers or macaroon crumbs into dessert dishes; spoon pudding over crumbs. Chill. 4. Serve with whipped cream, banana slices and additional grated chocolate sprinkled over top, if desire
