Pineapple Icebox Pudding

Ingredients:


1 large egg -- well beaten

3 cups crushed pineapple -- well drained

3 tablespoons cream

1 cup coarsely chopped pecans

8 teaspoons cold butter

1 cup sugar

1/2 pound vanilla wafer cookies

1/2 teaspoon salt
 

Preparation / Directions:


Cream butter and sugar together until sugar is dissolved. (This is the secret to lusciousness.) Add egg, cream, nuts, pineapple and salt; beat thoroughly. =46ill mold or glass bowl with alternate layers of wafers and pineapple cream. Refrigerate overnight.
