Crustless Spinach Cottage Cheese Quiche |

Ingredients:
3 large eggs -- beaten |
10 ounces frozen chopped spinach -- thawed and drained |
2 cups cottage cheese |
1/4 cup grated Parmesan cheese |
3 tablespoons shredded Swiss cheese |
1/2 teaspoon Dijon mustard |
1/4 teaspoon instant minced onion |
1/4 teaspoon dry mustard |
1/4 teaspoon red pepper |
1/8 teaspoon salt |
1 spray Vegetable cooking spray |

Preparation / Directions:
Combine all ingredients except cooking spray; mix well. Pour into a 9 inch pie plate coated with cooking spray. Bake at 350 F for 35 to 40 minutes or until set.
