Brazos Cafe Mango Chili Relish

Ingredients:


2 tablespoons lime juice

3 medium ripe mangos -- peeled and diced

8 medium ripe peaches -- blanched peeled and diced

1/4 teaspoon coriander

5 medium serrano peppers -- stemmed and diced

1/4 teaspoon ground allspice

1 bunch green onions and tops -- finely chopped

1 tablespoons fresh mint -- chopped

2 cloves garlic -- finely diced

3 tablespoons fresh cilantro -- chopped

1 tablespoons fresh chives -- chopped

1/4 teaspoon salt and white pepper -- to taste

1 1/2 ounces tequila -- optional
 

Preparation / Directions:


Cover fruits with juice. Separately, mix well rest of ingredients; gently toss into fruit. Adjust salt and pepper to taste; add more lime juice if desired. Cover; refrigerate at least an hour before serving. Wonderful accompaniment to grilled meats.
