Carrot Relish

Ingredients:


2 pounds carrots -- sliced

1 medium onion -- chopped

1 medium green pepper -- chopped

1 cup sugar

1 teaspoon salt

1 teaspoon dry mustard

1 teaspoon black pepper

1/2 cup corn oil

3/4 cup white vinegar

1 teaspoon worcestershire sauce

1 can tomato sauce -- (8 oz.)
 

Preparation / Directions:


Salt carots and cook until done; set aside. Chop onion and green pepper and set aside. Mix sugar, salt, dry mustard and pepper; stir well. Add corn oil, vinegar, worcestershire sauce and tompato sauce; mix well. Combine carrots, onions and peppers. Pour liquid mixtue over relish and marinate overnight.
