Preparation / Directions:Combine corn, zucchini, red pepper and red onion in medium bowl. To make
dressing, whisk ingredients together in a small bowl. Add the dressing to the corn mixture.
Toss to blend. Chill until serving time, at least two hours. To serve, drain salad. Place lettuce
leaves on a plate and topwith a dollop of salad.
