Orange Scented Sundries Tomato Relish

Ingredients:


2 pinches powdered saffron

1 cup dry white wine (such as a Sauvignon Blanc)

1/4 Cup red wine vinegar

1/4 Cup sugar

1 tablespoons olive oil

2 tablespoons red onions finely diced

2 tablespoons yellow bell peppers finely diced

1 cup tomatoes peeled, seeded and chopped

1 cup dried tomato halves (air packed)

1 teaspoon zest of 1 orange

1 cup tomato juice

4 medium oranges peeled and segmented

1/4 teaspoon salt

1/4 teaspoon cayenne pepper
 

Preparation / Directions:


Reconstitute dried tomatoes in hot water; drain and slice thin. Simmer saffron in white wine for 5 minutes. Strain into another pan containing red wine vinegar and sugar. Reduce to syrup-like consistency over medium-high heat. In oil, lightly saute onions and pepper, retaining color and texture. Add tomatoes, dried tomatoes, zest, juice, oranges, salt and pepper and allow to stand 2 or more hours at room temperature to develop taste.
