Raysa's Italian Risotto

Ingredients:


1 cup arborio rice

1 medium green pepper chopped

1 medium red pepper chopped

1/3 cup onions chopped

1 cup mushrooms sliced

2 3/4 cups chicken broth

1 teaspoon olive oil

1/2 cup parmesan optional
 

Preparation / Directions:


Have broth heating in saucepan. In pan add tiny bit of olive oil. Saute onions until tender; add rice and stir until lightly browned. Add some broth and cook until absorbed. Continue adding broth until rice is tender. In another pan, add a tiny bit of olive oil. Saute peppers and mushrooms until peppers are tender. Toss rice mixture with pepper mixture. Can serve with Parmesan if desired.
