Creamy Tofu Dressing

Ingredients:


1 cup firm tofu -- (bean curd) sliced

1 large garlic clove -- minced

2 tablespoons low-sodium soy sauce

1 medium lemon -- juice with pulp

1/4 teaspoon dried leaf oregano

1/4 teaspoon dried leaf marjoram

3 tablespoons balsamic vinegar

3 medium green onions -- chopped

1/4 cup water -- about
 

Preparation / Directions:


Place tofu slices in a blender or a food processor fitted with the metal blade. Add remaining ingredients and only as much water as needed to make desired consistency. Process until smooth. Makes 2 cups.
