Tofu-Basil Dressing

Ingredients:


1/2 package Silken (Creamy) Tofu -- (about 5 ounces)

2 tablespoons Cider Vinegar

2 tablespoons Unsweetened Apple -- or orange juice

1/2 Teaspoon Dijon Mustard

1 clove Garlic Minced Or Pressed

2 tablespoons Fresh Basil -- chopped

1/4 Teaspoon Salt
 

Preparation / Directions:


Place all of the ingredients in a blender or food processor and puree until smooth. Covered and refrigerated, Tofu-Basil Dressing will keep for about a week. Use to dress tossed salads, chopped tomatoes, steamed green beans, asparagus, or little new potatoes
