Cauliflower WITH LIME and HOT PEPPER VINAIGRETTE

Ingredients:


5 Cup cauliflower florets

2 tablespoons lime juice

1 1/2 teaspoon red wine vinegar

3/8 teaspoon red hot chili flakes

1/2 teaspoon garlic minced

1/2 teaspoon ground cumin

1 1/2 tablespoons finely minced cilantro
 

Preparation / Directions:


Blanch cauliflower and plunge into ice water to stop the cooking. Heat the lime juice, vinegar, and chili flakes in a saucepan over medium heat until the flakes have softened. Pour over the cauliflower. Add the garlic, cumin and cilantro. Let marinate at least one hour.
