Coco Vinaigrette

Ingredients:


1 1/2 tablespoons oregano or 1/2 tablespoon dried

1 1/2 tablespoons basil fresh minced

1/4 cup red wine vinegar

2 tablespoons lemon juice -- fresh

1 teaspoon garlic -- minced

1 tablespoon dijon mustard

1 teaspoon capers -- drained

1 teaspoon sugar

1/4 cup coconut milk

3 medium scallion -- finely chopped

3/4 cup vegetable oil

1 teaspoon salt and pepper
 

Preparation / Directions:


Place all the ingredients except the oil, salt and pepper, in a processor and puree. With the machine running drizzle in the oil. Add the salt and pepper. Store in an airtight container in the refrigerator for up to 3 weeks
