Marinated Raw Asparagus Salad

Ingredients:


1/2 cup olive oil

3 tablespoons fresh lemon juice

1/2 teaspoon garlic -- minced

1/8 teaspoon dried oregano -- crushed

4 medium asparagus spears -- thinly sliced

6 medium mushrooms -- thinly sliced

1 cup snow peas

1 medium romaine lettuce -- torn

1 package cherry tomatoes -- halved
 

Preparation / Directions:


Combine first four ingredients and blend well. Place the asparagus, mushrooms and snow peas in marinade and refrigerate overnight. In a large salad bowl tosst the Romain lettuce with the marinade and vegetables. Serve garnished with tomatoes.
