Southwest Chicken Potato Salad |

Ingredients:
1 1/2 pounds new potatoes (5 to 6 medium), cut into 3/4-inch cubes |
1/4 cup water |
1/4 cup mayonnaise or salad dressing |
1/4 cup sour cream |
1/4 cup salsa |
1 1/2 cups chicken or turkey cubed cooked |
1 large tomato seeded and chopped (1 cup) |
7 ounces whole kernel corn drained |
2 tablespoons green chilies chopped , drained |
2 tablespoons ripe olives sliced, drained |

Preparation / Directions:
1. Place potatoes and water in 2-quart microwavable casserole. Cover and microwave on High 10 to 12 minutes or until potatoes are tender; drain.
2. Mix mayonnaise, sour cream and salsa in large bowl. Gently stir in remaining ingredients.
3. Cover and refrigerate at least 2 hours until chilled.
