Classic Poached Salmon

Ingredients:


1 cup water

1 cup dry white wine

1 small scallion -- chopped

4 slices lemon slices

2 fillets salmon fillets

1 tablespoons unsalted butter

1/2 cup heavy cream

1 teaspoon paprika

2 ounces caviar

1 teaspoon black pepper and salt
 

Preparation / Directions:


Bring water and wine to boil over high heat. Lower heat to simmer. Place salmon fillets in pan of liquid. Add scallion. Lay a buttered sheet of parchment over fish. Simmer 5 minutes. While fish is poaching, heat cream in small saucepan. Boil 2-3 minutes until thickened. Stir in paprika and caviar. Add pepper and salt to taste. When fish flakes remove from pan with a fork and put on plates. Pour caviar sauce over and have a happy anniversary dinner! Approximately 5-10 minutes.
