Salmon Carbonara

Ingredients:


1 can salmon -- (7 3/4 oz.)

8 ounces spaghetti

2 large eggs -- beaten

1 cup grated Parmesan cheese

1/4 cup butter -- melted

1/2 cup chopped fresh parsley

1/8 teaspoon coarsely ground black pepper

1 cup Additional grated Parmesan cheese
 

Preparation / Directions:


Drain salmon; flake into small chucks, and set aside. Cook spaghetti according to package directions; drain well. Combine spaghetti and next 5 ingredients, tossing to coat. Add salmon, and toss gently. Spoon spaghetti into a serving dish, and sprinkle with Parmesan cheese.
