Salmon With Sesame Vegetables

Ingredients:


1 pound salmon fillet

2 teaspoons sesame oil

1/4 cup unsalted butter

1 cup leeks -- white part only

1 cup carrot

2 teaspoons fresh ginger root

1 tablespoons garlic

3/4 cup dry white wine

1/2 cup clam juice

1/4 teaspoon sesame seeds
 

Preparation / Directions:


Brush salmon fillets with sesame oil season with salt and white pepper heat a non-stick skillet, over a high flame add salmon in small batches and sear for 2 minutes per side, until just cooked through remove to a serving platter repeat with remaining salmon heat half the butter in the same skillet, over a medium flame add leeks, carrots, ginger, and garlic heat and stir for 4-6 minutes, until barely tender arrange vegetables with salmon on a serving platter cover with foil to keep warm deglaze skillet with wine and clam juice simmer for 8-10 minutes, until reduced to a thickened glaze whisk in remaining butter spoon over salmon and vegetables garnish with toasted sesame seeds serve warm
