Sweet-Hot Salsa |

Serves: 1 3/4 cups |

Ingredients:
1 medium papaya peeled, seeded and chopped (1 1/2 cups) |
1 small cucumber peeled and chopped (1 cup) |
1 small carrot shredded (1/3 cup) |
1 small jalapeno chili seeded and finely chopped |
1 tablespoons lime juice |
1 tablespoons white vinegar |
1/2 teaspoon sugar |
1/4 teaspoon salt |

Preparation / Directions:
1. Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors, but no longer that 2 days.
2. Stir salsa before serving.
