Black Bean Relish

Ingredients:


1/4 teaspoon salt

1 tablespoon vegetable oil

2 tablespoons white wine vinegar

1/4 cup red onion -- finely chopped

1/2 cup red bell pepper -- chopped

1 medium serrano chile -- **

3/4 cup tomato finely chopped

15 ounces black beans
 

Preparation / Directions:


* Black beans should be canned and they should be rinsed and drained. ** Serrano chile should be seeded and finely chopped. Mix all ingredients. Cover and refrigerate until chilled, about 1 hour. Makes about 2 1/2 cups relish.
