Salsa Cruda (Fresh Tomato Salsa) |

Ingredients:
4 medium tomatoes -- peeled, finely chopped and seeded |
1/2 cup onions -- finely chopped |
1 teaspoon salt |
1/2 cup celery -- finely chopped |
1 teaspoon coriander seeds -- crushed |
1/4 cup green pepper -- finely chopped |
1 teaspoon mustard seeds |
1/4 cup olive oil or vegetable oil |
1 dash pepper |
2 tablespoons green chiles -- up to 3 |

Preparation / Directions:
Combine all ingredients in a medium bowl; stir well. Cover and chill at least 4 hours, stirring occasionally. Serve salsa with grilled chicken or fish.
