Scallop Salsa |

Ingredients:
1 tablespoon virgin olive oil |
8 ounces sea scallops |
3 medium chipotles chiles en adobo |
3 medium tomatoes |
1 medium avocado -- pitted, peeled, and diced |
1/3 cup cucumber -- diced |
1 tablespoon lemon juice |

Preparation / Directions:
Heat the oil in a skillet and sauté‚ the scallops over high heat for 2 minutes, until cooked through. Dice the scallops.
Rinse the chipotle chiles with water and cut into thin strips.
Add all ingredients to mixing bowl and combine thoroughly.
