Squash Salsa

Ingredients:


1 small zucchini -- (peeled)

1 small yellow squash -- (peeled)

1 medium carrot -- (peeled)

2 medium tomatillos

1 medium tomato

1 clove garlic

3 medium serrano chiles

1/2 small red onion

1 tablespoon finely chopped marjoram

4 teaspoons extra virgin olive oil

1 tablespoon unseasoned rice vinegar

1 tablespoon sugar

1 teaspoon salt to taste
 

Preparation / Directions:


Finely dice all, mix and let sit for an hour before serving.
