Watermelon Pico De Gallo

Ingredients:


1 1/2 cups seedless watermelon -- cut into 1/4 inch dice

1 medium jalapeno chile pepper --

1/4 cup honeydew melon -- cut into 1/4 inch dice

2 tablespoons lime juice -- fresh

1/4 cup cantaloupe -- cut in 1/4 inch

1/2 cup fresh cilantro leaves -- chopped

1/2 cup jicama -- diced

maple syrup -- to taste

1/4 cup red onion -- cut in 1/4 inch

1/2 teaspoon salt -- or to taste
 

Preparation / Directions:


Combine all ingredients in a medium bowl and mix lightly so as not to break up the watermelon. Serve immediately with Grilled Barbeque Chicken Breasts (separate recipe) or another dish.
