Cucumber Mango Salsa

Ingredients:


1 Medium ripe mango -- diced

1 small cucumber -- diced (peel on unless you prefer it off) or half a large cucumber

1 tablespoon red onion -- minced

1/4 teaspoon chili powder

1/4 teaspoon cumin

1 tablespoon seasoned rice vinegar

1 Medium lime -- (about 1 tbs) , juice of
 

Preparation / Directions:


Mix all and let sit in refrigerator for about a half hour. Serve over grilled fish, or as a side dish to poultry.
