El Cocodrilo's Cranberry Citrus Salsa

Ingredients:


2 cups cranberries -- (fresh or frozen)

1 cup chopped yellow or red onions

1/2 cup fresh orange juice

1 teaspoon the zest from 1 orange

1 medium jalapeno chile -- seeded and chopped

1/2 teaspoon ginger

3 tablespoons brown sugar

1 teaspoon honey

1 1/2 tablespoons rice wine vinegar

1 tablespoon tabasco sauce

2 tablespoons chopped cilantro
 

Preparation / Directions:


Combine all ingredients in a saucepan. Bring the mixture to a boil, then remove it from the heat and let it cool while stirring carefully - - - try not to split the cranberries! Chill before serving -- or serve the sauce hot.
