Fatfree Orange Salsa

Ingredients:


2 large oranges -- peeled (florida) pith removed and diced 1 1/2 c)

1 large tomato -- seeded and diced (1 c)

1/3 cup minced red onion

1 teaspoon grated orange peel

1 teaspoon minced garlic

1 teaspoon minced ginger root

2 tablespoons jalapeno chili pepper -- minced fine

1/4 teaspoon salt

1 tablespoon fresh cilantro -- or coriander
 

Preparation / Directions:


In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve. Before serving, stir in the cilantro.
