Hester's Grilled Corn Salsa

Ingredients:


6 Ears corn -- grilled and cut off the cob

1 Large ripe tomato or 2 small -- chopped

1 medium purple onion -- chopped

1 teaspoon cilantro to taste

1 medium lime juice (from a lime)
 

Preparation / Directions:


Mix all the ingredients and squeeze lime juice over the mixture to taste. Tip for turning this salsa into a meal: Add a can of rinsed black beans to make it more of a dish than a salsa. Either way, we always make a double batch as everyone loves this dish!
